Similar to the east meets west cleaver this chefs blade is made from slightly thinner steel to allow it to pass through a wider variety of foods with less resistance. Made of industrial tool steel from an old mill saw blade and zebra wood. Shaped like a garasuki knife, a traditional Japanese poultry butcher knife yet beveled on both sides of the blade with full tang construction like a french chefs knife. Made in Portland Oregon, the markings and unique character of each knife conveys the origins and history of the materials used. Overtime it will lose some of its reflective qualities but it will gain a patina representing a visual history of its owners use.

    Bought this as a gift for my significant other for the holidays. Ordering something online, without first having it in my hand, is always a stressful experience… you never know what you’ll end up with. This exceeded any assumption I had. Taking it out of the packaging, I was breathless. It is absolutely stunning, with a solid weight to hit and great hand feel. The black walnut grip with the carbon steel is gorgeous. So gorgeous in fact, I might need to order myself one after the holidays…. because I’m tempted not to give it to him and to keep it all to myself. 🙂
